Pandan flavored, Japanese Hokkaido milk bread recipe 🌿🍞 ———————————————— @redstaryeast @goldmedalflour
Ingredients:
• 2 1/2 cups bread flour
• 4 tbsp sugar
• 1/2 tsp salt
• 1 large egg
• 1/2 cup milk
• 1 pack of instant yeast (1/4 oz pack or about 2 tsp)
• 3 tbsp soften unsalted butter
• 2 tsp pandan extract
• 3 tbsp bread flour + 1/2 cup water to make tangzhong mix
• Extra bread flour for dusting
• 1 egg to brush on top of the dough
Steps:
1. Make tangzhong mix by adding bread flour and water in a small pan on medium heat. Mix well until mixture is smooth and thick like pudding. Turn off heat and set aside.
2. Combine bread flour, salt, sugar, and instant yeast. Stir dry ingredients evenly.
3. Make a well in the middle and add milk, egg, pandan extract, butter and tangzhong mix. Knead dough for about 20 minutes or until dough is soft and smooth.
4. Place dough in large, greased bowl with a plastic cover wrap on top or a damp towel.
5. Let dough rise for 1 hour in a warm area.
6. Flour surface area and divide dough into 8 pieces. Roll each piece into a ball.
7. Add the dough balls in a greased round pan. Place one dough ball in the middle and add the other ones around that middle ball. Try not to let them touch.
8. Cover and let the dough rise another hour in a warm area.
9. Beat one egg and brush on top of the dough.
10. Bake bread at 330 degrees until golden brown on top (approximately 30 minutes)
Homemade whipping cream:
• 1 cup of cold heavy whipping cream
• 2 tbsp sugar
• 1/2 tsp vanilla extract
Steps:
1. Place bowl and whisk in freezer (I used an electric hand mixer. Placed the two attachments inside a metal bowl in the freezer for about 10 minutes).
2. Combine all ingredients in the bowl. Beat on high until stiff peaks.

Iced tea and milk foam are favourite drinks during Summer of many people. Here are some suggestions for you to make them at home:
Ingredients
A. Black tea with sea salted milk foam
2 tbsp black tea
3/4 cup (180 ml) hot water
1 tbsp sugar for the tea
1 tbsp milk foam
1 tsp sugar for the milk foam
3 tbsp milk
1 cup ice cubes
B. Earl Grey milk tea with cheese foam
2 tbsp Earl Grey tea
3/4 cup hot water
1 tbsp milk powder
1 tbsp sugar for the tea
2 tbsp kem cream cheese - soft at room temperature
2 tbsp whipping cream
1 tsp sugar for the foam
1 - 2 tsp milk
1/8 tsp salt
C. Oolong tea with Hokkaido milk foam
1 tbsp Oolong tea
3/4 cup hot water
1 tbsp sugar for the tea
2 tbsp whipping cream
1 tbsp milk
1 tsp dry milk powder
1 tsp milk foam
1 tsp sugar for the foam
If you don't have milk foam powder, you can follow these recipes instead:
A. For the sea salted milk foam
2 tbsp whipping cream
1 tsp sugar
1/8 tsp salt
whip till very stiff then add 2 - 3 tsp milk gradually. Mix well while adding milk and stop when the milk foam reach your desired consistency.
B. For the Hokkaido milk foam
2 tbsp heavy cream
1 tsp milk
1 tsp sugar
1/8 tsp salt
whip till thick and foamy

INGREDIENTS
38 g or 1/3 stick unsalted butter
80 g (about 82 - 83 ml or 1/3 cup + 1/2 tsp) whipping cream
40 g (about 40 - 41 ml or 3 tbsp less 1 tsp) milk
40 g (3 tbsp) sugar
3 ml (1/2 tsp) vanilla extract
2 g (1/2 tsp) salt
2 medium eggs (110 - 120 g including shell)
260 - 310 g bread flour (2 - 2.5 cups)
5 g (1.5 tsp) instant dry yeast
20 g sliced almond (optional)
* NOTE 1: Whipping cream can be substituted with 10 g butter + 70 g milk. However, the taste and the texture of the bread won't be as good as when using cream.
* NOTE 2: I used a scale to weigh all ingredients including liquid. Be careful with the cup/tbsp, etc. as it might not be precise. For example, 1 cup bread flour in the US equals to 130 gram. However, 1 cup of my bread flour (in Germany) equals to 140 gram.

B. Butter & cinnamon sugar:
